These are a favourite in our household. Simply prepare some bifun, soba or other noodles of choice. Chop carrot, celery, avocado, cucumber and other veggies into strips. Prepare some mint, coriander, or other herbs. Make an omelette or poach some chicken or prawns. Soak rice paper wrap in a bowl of warm water until soft, lay flat on a plate and assemble your fillings inside, then roll up and seal. Dip in your favourite dipping sauce and eat until your tummy is humming with joy!
Even the kids can make their own.
