I'm addicted to tangy salty umeboshi plums, so is my toddler. The ume plum's juice makes a stunning vinegar, used widely in Japanese cooking as a seasoning...it goes beautifully tossed with steamed vegetables, sprinkled over sautéed greens and rice, or as a zingy salad dressing addition.
Quite salty, but with a sour, fruity flavour, plum vinegar is very unique and can be creatively applied to vegan dishes where a sea-like or fish flavour is desired. It can be used in place of a fish sauce, on the slightly fruitier and brighter end of your palate.
Ingredients - Ume juice, water, sea salt. Non-organic.
