Named after a small town in Greece, but grown here in Australia, Kalamata olives provide a smooth meaty texture and a full-on earthy flavour. These classics work particularly well in dishes hailing from the Mediterranean. Try scattering them over a whole fish accompanied by fresh vegies and rosemary, then roasting the whole pan in the oven with lashings of Grumpy's olive oil.
