Heavenly Paelo Pancakes
The perfect recipe for that special weekend breakfast when you need a treat but want to keep it healthy! Plus it’s a recipe easy enough that the kids can put together with minimal assistance from us in the kitchen (that’s right, think Mother’s Day & Father’s Day!) These pancakes are paleo, gluten free, grain free & sugar free. So many wins in one simple recipe.
½ cup almond meal (blanched for a white pancake)
½ cup tapioca or arrowroot flour
3 Tbs coconut flour
2 tsp Australian Hemp Protein
1 tsp baking soda
2 free range eggs
½ cup full cream coconut milk
Combine all ingredients in a blender or mixing bowl. Pour onto a hot skillet and cook just like a regular pancake flipping when it begins to bubble on top!
Serves 2 - double recipe for 4.
Top with your fave yogurt, fruit and sprinkles.
